  cleaning    the back of the fryer caught fire the other day. im now trying to take it apart to clean it, but cant get into the bit that needs cleaning. its the shaft at the back that goes right down and under the oil. so i need to know how your supposed to clean something you cant get to. any ideas?

  changing fryer filter    should the fryer filter be changed daily or can it go more than 1 day in the slow season. we just got a new 4 basket pitco and I want to make sure it lasts. We filter the grease every night and boil out once a week.
